     A fragrant blend of mustard seeds, curry leaves and roasted coconut.

    Locally made in small batches from freshly roasted spices and the best Australian produce, these award-winning products are inspired by my childhood in India and honed over years as an international chef.

    A great South Indian all rounder. Chettinad cuisine is most renowned from the Southern state of Tamil Nadu. Made using a favourite recipe handed down by my Aunty Rosie.

    Inspiration from an Indian kitchen (Serves 4-6)

    1. Sauté 1kg of your choice of protein or veggies in a little oil.
    2. Add 1 jar of Aunty’s Madras Chettinad curry paste and 1 jar of water.
    3. Stir - Boil - Simmer - Cook.
    4. Finish with coconut milk, cream or yoghurt.
    To spice up, add extra ginger, garlic and chilli at Step 1.
    Or garnish with an oil temper of mustard seed, curry leaves, whole dry red chilli.


    Special Recipe

    Beef Madras Chettinad

    Preparation time: 10 minutes

    Cooking time: 30-40 minutes

    Serves: 6

    Ingredients:

    • One jar of Tamarind Tree Aunty’s Madras Chettinad gourmet sauce

    • 1.2kgs Rump beef, diced

    • 2 tbsp. Oil

    • Salt to taste

    • ½ can chickpeas (optional) drain and rinse

    • 260ml warm water

    • 50ml Coconut milk or fresh cream (optional)

    Process:

    1. Heat oil in a large saucepan.

    2. Add diced beef and brown on all sides.

    3. Add a jar of Tamarind Tree Aunty’s Madras and 260ml of water. Season to taste. Bring to a boil and cover with a lid, simmer until meat is tender.

    4. Add chickpeas if desired and coconut milk or cream. Bring to a boil and turn off.

    5. To make this dish special – In a frying pan, heat oil heat cracked mustard deeds, chilli and curry leaves. Spread over the curry to garnish.

    6. Serve with fluffy basmati rice, naan or roti cucumber raita and poppadum’s.

    Perfect for slow cooker

    I cooked Madras beef curry, following the recipe on the jar. I added some potatoes I gave it three hours on high and then four hours on low. It was so tender and fragrant, and significantly better than any paste I have ever used. So simple, but so very tasty. As dear Molly Meldrum would have said: do yourself a favour and make this dish - you will be glad you did. And you’ll want to cook it again very soon afterwards. Highly recommend.

    Delicious all-rounder

    I spent years making Indian curry pastes from scratch (still sometimes do) until I started using Tamarind Tree. And Aunty's is my favorite - has never failed in taste no matter if all-veg, tofu, pulses, meat or a combination. Making a beef and kidney curry right now, and realised it's my last jar in the cupboard, so need to get some more soon.

    Made Chickpea and Potato curry with this paste (recipe given to me when I bought the paste at Carlton North farmer’s market). The curry was absolutely sensational and now a firm family favourite. Couldn’t recommend it more.

    This was a challenge for me as i dont cook that much. Loved it though and it turned out great haha.
