Eggplant or “brinjal” pickles have much regional variation due to differences in technique. An eggplant pickle from Southern India can taste very different to one from the North. Our version is robust and spicy.

Make a meal with a naan or roti or make a spicy sandwich. Smash the eggplant pickle and toss it through a potato salad or mix it to make a chickpea salad with fresh coriander.
