Eggplant Tikka

• 3-4 medium eggplant
• Olive oil
Tamarind Tree Classic Tikka Paste
• 1 tablespoon whole cumin seeds
• 1 tablespoon chopped fresh coriander
• Salt
• To serve, Tamarind Tree Tomato Kasundi


1. Slice eggplants diagonally in half and set on a baking sheet
2. With a sharp knife, score eggplant in a diamond pattern
3. Drizzle with olive oil and spread Tamarind Tree Classic Tikka Paste on to eggplant surface, ensuring that paste seeps into eggplant cuts
4. Roast in a 200-degree oven for 35-40 minutes or until browned
5. Meanwhile, toast cumin seeds in a dry pan- set aside
6. Place on a serving plate, drizzle with more olive oil and sprinkle with toasted cumin seeds and fresh coriander
7. Serve with Tamarind Tree Tomato Kasundi
