Sweet Potato and Spinach Pakora

Makes about 12

• 1 medium sweet potato, peeled and grated
• 100gms spinach, chopped
• 2 tablespoons fresh coriander, chopped
• 1 green chilli, diced
• 1 small white onion, diced
• 1 cup chickpea flour
• 1/3 cup of plain flour
• ½ cup of water
• 2 tablespoons Tamarind Tree Coriander and Ginger Tandoori Paste
• Juice of 1 lime
• ½ teaspoon salt
• Vegetable oil for shallow frying


1. Combine chickpea and plain flour, salt and mix well
2. Add water, Tamarind Tree Coriander and Ginger Tandoori Paste, lime juice to make a thick batter
3. Add sweet potato, spinach, coriander, onion and chilli to batter and mix well
4. Heat oil to medium and drop in small spoonfuls of batter, about 5 at a time
5. Cook for a minute on one side and flip over and cook other side
6. Drain on a paper towel
7. Serve with Tamarind Tree Spicy Lemon Pickle
