- 2 cups of brown basmati rice
- 1 medium brown onion, chopped
- 1 tablespoon olive oil
- 1 clove garlic, minced
- 1 teaspoon yellow mustard seeds
- 1 tablespoon fresh coriander, chopped
- 2 tablespoons Tamarind Tree Tomato Kasundi
- 1 diced tomato to serve
- Boil rice for 15-20 minutes (brown basmati will take longer than white)
- Fry chopped onion and garlic in olive oil until just softened
- Add mustard seeds and heat through until they begin to pop
- Add Tamarind Tree Tomato Kasundi and fresh coriander and stir well.
- Drain rice thoroughly
- Add rice to onion and tomato and stir thoroughly
- Serve with diced tomato and more chopped fresh coriander
