Tomato and Onion Rice

Ingredients
  • 2 cups of brown basmati rice 
  • 1 medium brown onion, chopped 
  • 1 tablespoon olive oil 
  • 1 clove garlic, minced 
  • 1 teaspoon yellow mustard seeds 
  • 1 tablespoon fresh coriander, chopped 
  • 2 tablespoons Tamarind Tree Tomato Kasundi 
  • 1 diced tomato to serve 
Method
  1. Boil rice for 15-20 minutes (brown basmati will take longer than white) 
  2. Fry chopped onion and garlic in olive oil until just softened
  3. Add mustard seeds and heat through until they begin to pop
  4. Add Tamarind Tree Tomato Kasundi and fresh coriander and stir well. 
  5. Drain rice thoroughly
  6. Add rice to onion and tomato and stir thoroughly 
  7. Serve with diced tomato and more chopped fresh coriander
