Tamarind and Date Baked Ham

Seasonal Dish  


3-5kg leg of ham
1 jar Tamarind Tree Tamarind and Date Chutney  
1 teaspoon brown sugar
4 large red onions sliced
2 tablespoons fresh coriander
1 teaspoon sumac
50gms dried cranberries


  1. Remove skin from ham carefully
  2. Score the ham with a sharp knife in a diamond pattern
  3. Baste ham with Tamarind Tree Tamarind and Date Chutney
  4. Stud with cloves in the cross-section of the diamond pattern
  5. Bake at 165 degrees for 1 hour
  6. Remove from oven and baste with juices
  7. Combine onions, sumac, cranberries, and coriander with one teaspoon of the ham juices.
  8. Stir thoroughly.
