Seasonal Dish
Ingredients
3-5kg leg of ham
1 jar Tamarind Tree Tamarind and Date Chutney  
1 teaspoon brown sugar
4 large red onions sliced
2 tablespoons fresh coriander
1 teaspoon sumac
50gms dried cranberries
Ingredients
- Remove skin from ham carefully
 - Score the ham with a sharp knife in a diamond pattern
 - Baste ham with Tamarind Tree Tamarind and Date Chutney
 - Stud with cloves in the cross-section of the diamond pattern
 - Bake at 165 degrees for 1 hour
 - Remove from oven and baste with juices
 - Combine onions, sumac, cranberries, and coriander with one teaspoon of the ham juices.
 - Stir thoroughly.
