Serves 4 as a side dish
1 cup of basmati rice
2 tablespoons peanuts
1 teaspoon of mustard seeds
1 dried red chilli (crushed or sliced)
3 tablespoons Tamarind and Date Chutney
Fried onions to serve
Boil rice and drain.
In a dry frying pan toast peanuts, mustard seeds and chilli until slightly browned. Add in 1 tablespoon of oil and swirl to coat.
Add rice to a large mixing bowl, stir through tamarind and date paste, peanuts, chilli and mustard seeds and mix thoroughly
Serve with crunchy fried onions on top.
