1 Jar Tamarind Tree Rogan Josh
2 440gm tins red kidney beans
250gms potato- peeled, cubed and parboiled
1cm crushed ginger
1 large green chilli finely diced
2 cloves garlic, minced
¼ teaspoon salt
1 tablespoon tomato paste or plain yoghurt (to spice down)
1 tablespoon ghee or oil
Julienned ginger, diced tomato and chopped coriander
Basmati rice, roti
Heat oil or ghee and sauté garlic, ginger, and chilli to release the flavours (about 30 seconds).
Add beans and potatoes and sauté for 1-2 minutes.
Add Tamarind Tree Rogan Josh and 1 jar of water, stir. Add tomato paste or yoghurt, bring just to the boil and them turn down to simmer for 10 minutes r until potato is cooked.
Top with coriander, fresh ginger and tomato and serve with basmati rice.
