Serves 2, easily doubled
3 tablespoons olive oil
2 large white onion, sliced
1 cloves garlic, crushed
½ cup red lentils
¼ cup green peas
2 tablespoons Tamarind Tree Doe Piazza
2 Large zucchini, sliced thickly
1 tablespoon coriander, chopped
Tamarind Tree Spicy Lemon Pickle
Boil red lentils for 3-5 minutes or until just starting to soften. Set aside.
Add oil to the pan and sauté onions and garlic until well cooked and browned.
Turn up heat and flash fry zucchini so they brown but remain firm.
Add onions, green peas, red lentils to zucchini and stir through Tamarind Tree Doe Piazza and ¼ cup of water. Heat through for 5 minutes.
Serve with your choice of coriander and rice, roti, bhuja mix and lemon pickle.
